Former Teacher Hopes to Whet Concord's Appetite for Healthy Food
Lettuce In, a restaurant serving fresh salads and sandwiches as well as a vegan menu, is still striving to grow after its first year in business in Todos Santos Plaza.
It's been more than a year since Karen Bell, 53, gave up her job as a pre-school director and opened a salad and sandwich restaurant in Concord. The salads are her masterpieces — but now she's having to get creative just to stay in business.
Lettuce In opened its doors on Grant Street in Todos Santos Plaza at the end of August, 2011, as a healthy eating lunch spot with vegetarian and vegan specialties. A year later, Bell says the business has been "building slowly," but despite all the greenery — she's still in the red.
