Family Brings Vegetarian Restaurant to Concord

Veggie Today is a vegetarian restaurant serving Asian cuisine at the former Cuba Linda location at 1909 Salvio Street. Will Concord develop a taste for meat free meals? You tell us.

Don't be confused by the words "chicken," "beef," and "shrimp," when you first lay eyes on its menu. Concord's newest restaurant, Veggie Today, features 100 percent vegetarian meal choices.

"It looks like meat and tastes [like meat], but isn't," said said Loc Tran, 29, owner of Veggie Today. "It's soy-based."

Tran opened the business at 1909 Salvio Street on June 10 with support from his mother, Nho Tran, and brother, Eric Le, who together average 20 years of experience in the business.

"Concord is very affordable," said Tran, a University of California Davis physics grad and Oakland Resident. " ... and with my family's experience, we decided to open here."

Tran would like to some day go back to school in pursuit of his master's degree, but until then, the restaurant business is where he and the family belong, he told Patch.

"And it employs the family," he added.

Despite the business only being four weeks old, Tran said a recognizable clientele is already noticeable.

"People like us, so a lot of them keep coming back," said Tran.
