Fresh At The Farmers' Market: Crisp Corn
Fresh corn on the cob is in season through September and available at your local farmers' market.
This week's featured product at the farmers' market comes naturally pre-wrapped and is perfect as a summer barbecue side dish.
Sweet corn, also called sugar corn and pole corn, is one of the most important crops in America and is second only to wheat in terms of acreage planted.
The Pacific Coast Farmers' Market Association (PCFMA) suggests that when choosing corn at the local farmers' market, the husks should be green, tight and fresh looking and the ear inside should contain tightly packed rows of plump kernels.
Corn on the cob will lose up to 40 percent of its sugar content after six hours of room temperature storage, according to PCFMA, which is why fresh corn packs a much fuller flavor.
In addition to being boiled, steamed or roasted, corn can also be enjoyed raw, right off the cob.
